The kids going back to school has put me in the mood for some special lunchbox treats…our school has a healthy eating policy which is fantastic but occasional home baked goods are allowed. Flapjacks are a good energy source but are full of sugar so definitely to be saved for treat day which is Friday in our house.
While making these I remembered that I had a jar of this truly amazing and local Hazelnut Toffee Dulce de Leche from Ballyshiel in the press, it is made here in Offaly and is heavenly over ice cream or on pancakes and many other delicious sweet treats.
I decided to add it into the wet mixture and see what happened……the result, well bake them and see, all I can say is that they didn’t last kissing time in this house!
1 tsp of vanilla extract
1 tbsp Golden Syrup
2 generous tbsp Ballyshiel Hazelnut Toffee Dulce de Leche
175g Soft brown sugar
75 g plain flour
385g Jumbo Porridge Oats ( I use Kilbeggan Oats)
Preheat oven to 180
Place the butter,vanilla, Dulce de Leche, golden syrup and sugar in a saucepan and heat gently until butter and sugar are melted and the mixture is smooth.
Remove from the heat and stir in the flour and oats and mix well.
Line a baking tin with parchment paper and spread the mixture evenly onto this.
Place in middle of preheated oven for 20 mins (fan oven) 25 mins( regular oven)
Allow to cool slightly before cutting into squares.
Sneak into little ones lunch boxes for a surprise treat ( along with their toothbrush and extra strength toothpaste!!)
