Love Your Cookbooks |The Linky

So a month ago I set myself a cookbook challenge, to start to use, and not just read, my vast collection of cookbooks. I also promised a future linky and here it is.
I would love if any of you reading would join in and share what you cook.
I blogged the two dishes, including photos of the recipes, I intended to cook here and this is how it went.

Dish 1:
Domini Kemps Chicken Apple and Flageolet Bean Casserole from ‘Dinner’

I have to fess up and admit that I couldn’t find Flageolet Beans anywhere a so I used tinned black eye beans ( because I had them in the pantry) instead. I think butter beans or cannellini would work a bit better as they would be more substantial.
I also used Mediterranean flavoured sausages which would have changed the end flavour somewhat.

The Result:

I LOVED this dish, it was so flavoursome, the sauce was plate lickingly good and both the chicken and sausages were delicious. I couldn’t recommend this dish highly enough and it would be a great one if you are having guests for a casual dinner party as it is a one pot wonder. It is equally suitable for children as the apple gives a lovely sweetness to the dish. There are so many dishes in this book that I want to try. It certainly won’t be left languishing on the bookshelves.

Dish 2
Neven Maguires Chicken, Rocket and Pine Nut Pasta from ‘Neven Cooks 2’

I cooked this as a family dish. The recipe suggests chilli oil drizzled on the finished dish but I did this only for the grown ups. This dish would be great with left over roast chicken also.

The Result:

This was another big hit, clean plates all round from children and adults. I didn’t add the rocket or chilli oil to the children’s but it really lifted the dish from a tasty pasta dish to something more suitable to grown ups. I know that this will feature a lot on our menus.

So for next months challenge I am using two new cookbooks.
