Meal Plan Monday | What We Eat

This weeks meal plan has been driven by a clear out of the freezer and the pantry. While I’m usually great at clearing out the fridge, I’m not so great at rummaging through the pantry and, as a serial purchaser of dried goods that’s not a good thing! so there were lots of tinned good that I wanted to use and found some spices that needed using up also. A clear out of the baking press yesterday resulted in the making of a Multi Seed Brown Bread, a loaf of Banana Bread and some Banana and Peanut Butter Muffins. This weeks challenge to myself was that with the exception of fruit and veg, no other foods are being purchased and all lunches and dinners are being made from what we have.

So this week we are eating the following.

Monday

Baked Sausages with Puy Lentils. Yesterdays left over potatoes are being turned into potato cakes and there was gravy and veg left over which we will have with this.

Tuesday
Some very nice Tipo 00 flour was discovered in the baking press so I’m using this to make pizza dough using this recipe here and will make some tomato sauce from one of the may tins of tomatoes in the pantry. I will cook it down slowly with some oregano and blitz it to make a thick delicious tomato sauce. Any left over pizza dough will be brushed with garlic and herb butter and griddled to make a kind of flat bread/naan bread to have with the curries that we are having on Thursday.

Wednesday

The children are having spaghetti and meatballs which are in the freezer ( recipe here) and the grown ups are having some Sticky Pork stir fry. I had pork steak in the freezer and this has been thinly sliced and is marinating in some garlic, ginger, soy sauce, nam pla and caster sugar.

Thursday

I discovered a packet of The Green Saffron spice mix for Red Lentil Daal in the pantry and realised that we had all the ingredients required to make it, so this will be had on Thursday along with this Spiced Potato and Chickpea Curry and the naan type bread from Tuesday.

Friday
I haven’t quite figured out Friday yet, two of the children have a showjumping competition on Friday evening so I think maybe some soup after school and out for dinner after this might be the best plan.
